METHOD
- Put the oven on at 190°C/Gas 5 .
- Put flour, baking powder and fat into a mixing bowl
- Break fat into small pieces with a knife
- Rub fat into flour (to look like breadcrumbs)
- Stir in most of grated cheese, reserving some for the top of the scones
- Add mustard powder and black pepper
- Add the milk gradually and stop once the mixture is soft but not sticky.
- Gather with your hands and knead gently until it comes together.
- Sprinkle a small amount of flour onto the worktop, pat the dough into a round about 2cm thick and cut out shapes.
- Re-shape the dough until it has all been used up
- When cut out and on the baking tray, sprinkle with the remaining grated cheese and bake for approx. 15 minutes until golden
