I have been collecting jars for months now so that we have enough for the lemon curd we will be making during the first session of the holiday club. Fresh lemon curd is delicious and nothing like the bought stuff. I put a dollop in Greek yoghurt which makes it tangy and yummy. I also spread it on toast, scones, in a sponge cake, on croissants - the list is endless. You will definitely be wanting to make some more, so I will be giving out the recipes that go with each class.
The recipe for the scones is one I have used for years and I think they will go well with all the jams, summer fruits and of course, lemon curd.
In our second sessions at each venue, we will be making fruit crumble and cheesey biscuits. I am hoping there might be some hedgerow blackberries to go with the apples, so we can make them extra special. Crumble can be served hot or cold, with custard, cream or ice cream - very versatile.
The cheesey biscuits are absolutely delicious and very addictive, so be sure to have some mature cheddar at home so you can make more. They are much healthier than anything you can buy in the shops.
